Christos Zafeirakis is a fourth generation vigneron, but the first in his family to produce his own wine. His journey started in 1996 when Christos started an oenology degree in Athens, finishing it in 2000. In 2003 he took off to Italy to continue his education where completed a Masters in Oenology and gained experience in some of the countries top wineries. The vineyards are farmed organically and he insists on gentle honest winemaking. Ie. He only uses natural yeasts and long cool fermentations, which retain flavor and complexity.
